Ingredients

  • 1 wheel of provolone cheese (about 8 ounces, 1 inch thick)
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon crushed red pepper flakes
  • 1 clove garlic, minced (optional)
  • Fresh parsley, chopped (for garnish)
  • Crusty bread, for serving

Instructions

Prepare the Cheese

Preheat your grill to medium-high heat. If you don't have a grill, you can also use a cast-iron skillet on the stovetop.

Brush both sides of the provolone cheese wheel with olive oil to prevent sticking.

Sprinkle the dried oregano and crushed red pepper flakes evenly over the top of the cheese. If using, sprinkle the minced garlic over the cheese as well.

Grill the Cheese

Place the cheese directly on the grill grates or in a cast-iron skillet.

Cook for about 2-3 minutes on each side, or until the cheese is golden brown and slightly melted. Be careful not to overcook, as the cheese can melt too much and fall apart.

Serve

Remove the provoleta from the grill or skillet and transfer to a serving plate.

Garnish with freshly chopped parsley.
